Hospitality students prepare for Sinful Indulgence dinner

The latest of the UNH Hospitality Management Students' gourmet dinners is sure to be a sinful experience, with a seven-course meal that will leave your stomach wanting more.
"Sinful Indulgence" will be overseen and planned by the students of the Advanced Food and Beverage Management class as well as their professor, Amy Winans. The students are given a six-week period to prepare.

"My role is essentially that of an overseer along with my teaching assistants," said Winans. "We intervene when necessary to be sure that teams are working together. We make suggestions and give advice, but it is up to the students as managers in training to take the lead."

"We do everything from marketing to decorating to cooking the food to purchasing all the products," said hospitality student Carolyn Wilson. "It takes a lot of outside work and preparation."

"Sinful Indulgence" is a creative play on the lighter and historical side of the seven cardinal sins- lust, envy, gluttony, sloth, greed, anger, and pride. The students used the color and description of each sin to choose the menu.

The greed inspired hors d'oeuvres will include mushroom marsala and goat cheese puff pastry, aroncini with mascarpone cheese, olive tapenade on toaster crostini with zucchini and cherry tomatoes.

The pride inspired main course will feature bison medallion with patty pan squash, asparagus and Peruvian potato crisps.

"The menu was really a class effort," said junior hospitality student Ashley Gagne.

"Although we all had different ideas, I think the final menu is just what we envisioned it to be."

In previous years, the gourmet dinner was held at the New England Center but for the last two years has been relocated to Stillings Dining Hall.

Professor Winans said transforming the space is a huge challenge for the students. 

"It is rare that the perfect space exists for an event and it is up to the management overseeing the event to create an inviting space on a limited budget," she said.

The students work with a professional designer and florist to help them turn it into a fine dining experience.

The students have been preparing non-stop for the dinner that is now fast approaching. 

"Me and my other classmates have put so much time and effort into this dinner, I can't wait for it to be the night of the dinner to see all our hard work come together," said Gagne.

"Sinful Indulgence is a great chance to get out and enjoy live entertainment and a delicious seven course meal put on entirely by the Hospitality students," said Wilson. "Tickets are going fast, so purchase them now."

"Sinful Indulgence" will be held March 6 and 7 at Stilling Dining Hall. Cocktail hour begins at 6 o'clock followed by dinner. Entertainment will be provided by Maiden Harmony on March 5, and The New Hampshire Gentlemen on March 6.
